Frozen Broccoli on a Stick

Oatmeal/peanut butter/chocolate chip cookies

¼ cup butter
¼ cup natural peanut butter
¾ cup sugar (I use turbinado)
1 egg
1 Tbsp rice milk or other milk
1 tsp vanilla
¾ cup flour (I use part whole wheat)
1 cup rolled oats
1 tsp cinnamon
2 shakes of salt
¼ cup raisins or other dried fruit
¼ cup chocolate chips

Combine all ingredients, drop onto greased cookie sheet, and bake at 375º until just set.

This makes one tray of cookies – I usually get about 15.

My comments: I didn’t like these all that much at first, but they definitely grew on me and now I can’t wait to make them again. That said, I put them out with several other types of cookies, which were all finished long before these cookies. The guests just didn’t know what they were missing!
