From salon.com. Made for Thanksgiving, and people really liked them. The food processor has trouble truly blending it all, but that didn’t bother anybody overmuch.
10 Medjool dates
3 oz. goat cheese
1 tablespoon vanilla
¼ cup unsweetened cocoa powder
2 tablespoons cocoa powder for dusting
Pit dates (If you are using a blender instead of a food processor, chop the dates before putting in the blender.)
Put dates, goat cheese, ¼ cup of cocoa powder and vanilla in food processor and blend for 20 seconds. When the mixture is entirely smooth and coming together into a ball, it’s ready.
Put remaining cocoa powder on plate. Wet your hands slightly. Using your hands, roll the dough into little balls. Dust balls in cocoa powder.
Refrigerate for 30 minutes, and serve.
